Polynesian Bars

On a chilly day, put these hints of the South Seas in a lunch pail or your own lunch plate and think of warmer climes!

Ingredients
¾ cup whole wheat flour, fine
¾ cup rolled or quick rolled oats
¼ teaspoon salt
Orange or pineapple juice to moisten
¼ cup unsweetened shredded coconut
¼ cup chopped nuts
Date Filling for Polynesian Bars
2 cup chopped dates
6 T. water
1 cup crushed pineapple, not drained
½ teaspoon vanilla


Directions
Date filling: Cook ingredients together in saucepan over medium heat until thick and smooth. Use as filling for Polynesian bars.

Crumb mixture: Mix ingredients together using just enough orange juice or hold dry ingredients together. Pat half of crumb mixture into greased Pyrex baking dish 8”x8”. Cover with date filling mixture, then rest of crumbs. Pat well. Bake 30 minutes at 350 degrees. Let cool and cut into squares.
