Black Beans on Rice
Rice and beans are good tasting and a good protein
combination. Rice as well as beans can take on many different flavors,
and thus can be suited to morning meals as well as noon soups and
evening main dishes. This recipe is flavorful.

2 medium
1 clove
1/4 cup
1 leaf

Black beans
Onion chopped
Green peppers chopped
Garlic
Olive oil
Bay
Salt
Brown rice, cooked
Green onions chopped (add as many as you like) |
Directions
Cover beans with 6 cups boiling water and cook 1 hour. Braise onions,
green pepper, and garlic in oil. Combine with beans, add other
seasonings (except green onions) and cook until beans are tender and liquid is thick. Serve
over brown rice. Sprinkle green onions on top of beans. Serves 10.
