Hummus
Beans have diverse uses and can take on many
different flavors. Besides, beans have good protein and are rich in soluble
fiber. Hummus is a middle Eastern chickpea puree increasingly enjoyed
far beyond the mid-East. True mid-Eastern cooks have their own distinctively
flavored hummus, but the recipe that follows is a good beginning with
or without its chilies.

1/2 cup

4 cloves
1 1/2 tsp

4 oz can |
Cooked garbanzos or
chickpeas, drained (save broth)
Tahini (sesame seed butter)
Garbanzo broth or water
Fresh lemon juice
Garlic
Onion powder
Salt
Green chilies, chopped |
Directions
Combine all ingredients except chilies in a blender. Process on high
speed 1 to 2 minutes until smooth and creamy. Pour into a bowl and
stir in chilies. Garnish with a few finely diced tomatoes, fresh
parsley, and paprika.
