Summer Picnic Recipes

Summer is a great time to eat outdoors. Here are some fun foods that work well in a picnic.

Avocado Alfalfa (Delicious!)

Ingredients
1 cubed avocado
2 red tomatoes cut into chunks
Alfalfa sprouts, tender, crisp, green

Directions
Toss avocado and tomato with small amount of your favorite dressing. Put on nest of alfalfa sprouts. Serves 4.

Variations: Use shredded lettuce leaves or other salad greens if alfalfa sprouts are not your favorite.
 

Garbanzo Spread Special

Ingredients
1 15-oz. can garbanzos
1 6-oz. can olives, pitted, drained
½ small onion
2 tablespoons oil
½ teaspoon Vegex (or 1T of dried food yeast)

Directions
Grind all ingredients with finest blade of food grinder or chop in blender. In skillet place oil, Vegex, and garbanzo mixture. Saute and stir a few minutes. Delicious mixed with mayonnaise for a sandwich spread or on toast.

Variations: Use a few olive slices and/or chopped celery for added texture. You can also use well cooked white beans in place of garbanzoes.
