Savory Split Pea Soup
Dispel the last shivers of winter with this savory
soup. The ingredients provide rich flavor. There are 8 grams of
protein in every cup of soup. Delicious served with carrot salad, a
green vegetable, and crackers or croutons.
Ingredients
3 1/2 cups water
1 cup split peas, dried
1 cup potatoes, peeled and diced
2 tsp chicken-style seasoning
2 tsp Bakon Seasoning or 1/4 tsp liquid smoke
1/2 tsp salt
1 med Bay leaf
1 tbsp olive oil
1 cup onions, chopped
1/4 cup celery, slices
1 tsp garlic purée
1 cup water
1/2 cup carrots, diced
1 stem green onion, diced
1 tbsp nutritional yeast flakes
1/2 tsp dry basil leaf
1/2 tsp parsley flakes
1/4 tsp celery salt
1/4 tsp Seasoned Salt
Directions
In a large saucepan, combine first set of ingredients and bring to a
boil. Cover and simmer until peas are soft, about an hour. When
cooled, discard bay leaf. Pour remainder into a blender and process
until smooth and creamy. Set aside.
In a large saucepan, sauté the second set of
ingredients until onions are translucent and celery is tender.
Add the third set of ingredients to the onions and
celery mixture, bring to a boil, cover and simmer 15 minutes or until
carrots are tender. Add the blended pea mixture and stir until hot. If
desired, garnish with paprika, grated carrots or croutons. Yields 7
cups.
