Sesame Eggplant

One of the joys of cooking is trying new foods! Eggplant is a very versatile food and quite low in calories. Here is a quick way to fix eggplant. You may also want to try some of the variations listed below.

Ingredients
1 medium eggplant
2 tbsp. sesame seeds
2 tbsp. nutritional yeast flakes
1/2 c. milk (I use soymilk)
Breading meal
 

Directions
Mix sesame seeds and yeast flakes into breading meal. You can peel the eggplant or just wash it and cut it with the skin on. Slice eggplant into slices 1/3" thick; dip in soy milk. Dip eggplant slices into breading meal. Fry in olive oil until tender or bake on oiled flat dish, turning once, until tender.

Variations
After frying, you may want to put the eggplant in a baking dish and spoon on various toppings such as a nondairy or low-fat shredded cheese. Bake long enough to melt the cheese.

If you like tomatoes, spoon on spaghetti sauce. Cut olives in circles and place them on top for decorations. Bake until hot.

To add protein, smash tofu with a fork. Mix it with a little salt and seasoning if desired, and spread it on top of the eggplant. Then add the spaghetti sauce and olive slices. Bake until hot (10-15 minutes). Serve on a platter with sprigs of parsley and cherry tomatoes for a garnish.
