Sweet and Sour Tofu
Tofu is a soy product that is a very high quality
protein and can be fixed in many ways. Tofu itself has little taste
but because of this fact, it can be seasoned and fixed in many ways.
Eating soy protein has been shown to lower cholesterol levels and it
is a good replacement for animal proteins.
Ingredients
1 lb. tofu (use firm or very firm)
Soy sauce
1 large onion, slices
2 celery stalks, sliced diagonally
1 large bell pepper, large slices (or half red & half green bell
pepper, chunked)
1/4 cup tomato sauce
1 tbsp. brown sugar
1 20-oz can pineapple chunks (not drained)
2 tbsp. cornstarch added to 1/2 c. water (or some of pineapple juice)
2 tbsp. lemon juice
1 large tomato |

Directions
Drain 1 lb. tofu. Cut in 1" cubes. Place on greased cookie sheet.
Sprinkle with soy sauce. Bake at 450 degrees F. for 30 minutes. This
toughens the tofu and gives it a more pleasant texture.
Cut the vegetables into bite-size pieces and sauté
until crisp-tender in a large skillet. Add salt, tomato sauce, brown sugar, pineapple
chunks, cornstarch/water mixture and lemon juice and stir until
thickened. Last, stir in cubed tofu and 1 large tomato sliced
into wedges. Serve over steamed brown rice. Serves 6-8.
