Vegetable Recipes
Vegetables are the lowest in calorie of all food
groups and are loaded with healthy nutrients. Here are some tasty
ideas for enjoying more vegetables.
Green Beans Greek Style
1 lb. fresh green beans, sliced French style
2 tsp. oil
1 medium onion, chopped
½ cup tomatoes
1` T. fresh chopped dill or dill weed, dry
Salt
Prepare green beans. Saute onions in oil. Add tomatoes and simmer 5
minutes. Add green beans, seasonings, and a few tablespoons of water.
Cover and cook on low heat until beans are tender.
Broccoli with Almond Sauce
1 large bunch broccoli
2 T. oil
¼ cup slivered almonds
2 T. lemon juice
Salt
Wash cut broccoli. Steam over boiling water until tender. Brown
slivered almonds in oil. Add lemon juice. Pour over hot draining
broccoli. Serve at once.
Company Beets (or Carrots)
2 T. brown sugar
1 T. cornstarch
¼ teaspoon salt
1 T. margarine
1 T. lemon juice
1 1-lb. can sliced beets, drainer, or 2 cups sliced freshly cooked
beets or carrots
1 9-oz. can pineapple tidbits
Combine first five ingredients (everything except beets and pineapple)
and stir until well mixed. Add beets and pineapple and heat to
boiling. Serve hot.
